A coworker gave me this amazing recipe for tomato basil soup. It is so, so, so, sooooooo delicious. I add a little cream to make it richer when I'm not watching calories. HEAVEN!
Fresh Tomato Basil Soup
-2 lbs fresh tomatoes
-2 medium onions - sliced thin
-2 Tbs Basil
-2 Tbs Thyme
-2 Tbs Butter
-2 Tbs Olive Oil
-1 Tbs chicken buillion
-3 cups water
-1 tsp salt
-1/8 tsp pepper
Blanch tomatoes and remove skins and seeds
Saute onions in butter and olive oil.
Add all ingredients to a large pot and simmer over low heat for 20 minutes
Use a hand blender to chop up tomatoes.
